Healthy Cookies (gluten, dairy, sugar and oil free)

A friend came home for tea and wanted something sweet to munch. If there could be a healthier cookie option…she thought aloud; and that one thought became my next mission. I had to be able to provide the doughy and yet crisp, sweet and yet healthy cookies so that people like my friend could have a more fulfilling tea time. It would help working women and men alike, carry something to ensure there was a healthy snack available when hunger pangs came uninvited. And even a child, or a celiac, could have his/her cookie cravings met with all natural and nutrition packed ingredients.

So here are the Karamele cookies – made with almond, walnut and oat flours, they provide a multitude of vitamins and minerals, in addition to antioxidants and plenty of dietary fibre.

The addition of flaxseeds provides Omega 3 fatty acids and lignans, all the good stuff that many can miss out on.

And ultimately, to keep the refined sugar at bay, the sweetness in the cookies comes from the natural goodness of honey. To add to that sweetness and bring about a slight zing we have also added the antioxidant and nutrition rich cranberries. Now snack without guilt. Be happy and be healthy.
